FOOD PAIRING
When Jason Hooten and David Stoop started the boutique brand ONE, their philosophy was based around creating a series of unique wines that could capture the unique flavors of one grape varietal, one vineyard and one appellation inside each bottle. As the years passed, this journey led the team to the beautiful winegrowing region of Knights Valley, which is known for its warm days, cool nights and a unique mixture of rocky, gravelly and alluvial soils that are ideal for growing Bordeaux varietals, including this limited release offering of Cabernet Franc.

Alcohol: 14.4%
93 POINTS - “Deep, dark and attractive, with loft aromas of dark fruits, wild berries, fresh fungi and mountain herbs layered with more subtle notes of dried violets, leather, pipe tobacco, fresh earth and rustic spice. On the palate, the wine features complex flavors of briary blackberry, blueberry, dark plum, red currants, wild sage, clove, Mexican baking chocolate, a touch of classic earthy funk, and roasted chestnuts. Earthy, elegant and expressive, the profile is complimented with a lush texture, fine-grained tannins, a persistent finish, and more structure as the wine opens up in the glass." Chris Sawyer
To match these rich and earthy flavors, try this full-bodied wine with earth cheeses, grilled vegetables, charcuterie, risotto with freshly foraged mushrooms, pan-seared duck breast, roasted pork with dried herb rub, Tandoori chicken, spicy sausage, slow cooked meats and hearty stews.
