The 2018 Petar Oak Knolll Cabernet Sauvignon fruit is coming from small familly vineyard located on Big Ranch Road . The Oak Knoll sub-AVA is is one of Napa Valley’s oldest grapegrowing areas dating back to 1851, is located in the southern part of Napa, and is significantly colder region due to the coastal influence from the San Francisco Bay.

The grapes were handpicked in the begining of October, de-stemmed and crushed into small fermentation tank and allowed to cold soak for 3 days to help stabilize the color and enhance flavor. It was fermented for 17 days and pump-over 3 times a day, with an additional 3 days extended maceration to increase extraction of color and phenolic compounds. The wine is then gently pressed and aged on fine lees for 20 months in 100% French oak barrels with 35% new oak to preserve the delicate notes and mouthfeel. Only 12 barrels produced.
Bold and balanced the 2018 Petar Oak Knoll Cabernet Sauvignon, exhibiting aromas of dark fruit, cassis, earth, and cigar box accented with spice notes. This full-bodied and well-balanced wine makes a perfect accompaniment to any grilled meat dishes.
